You can discover what your sim prefers by interacting with sims and watching tv/movies. You can make a living from it or do absolutely nothing with it. However your sim will also be able to build the skills in that category faster than the average sim. It makes your sim naturally good at a certain category, once you discover your talent anything in that category your sim will be 5X better at it regardless of skill level. It varies per sim and it also depends on dedication on consistency. You have to put effort in trying to figure out what your sims talent it by making them try different types of hobbies. In real life you figure out what you are good at by actually trying things well it is the same for sims.
